Previously, we often went to a Turkish restaurant to feast on amazing kebabs there. All the time I wanted to know how they cook so deliciously that it is simply not possible to break away from the most tender slices.

At first I thought that they were fried on the grill, but instead of skewers there were always wooden skewers, and they were supposed to burn coal from the heat, or at least they should be scorched.

And then one day a friend shared her signature recipe, which turned out to be even more wonderful to taste than the previous favorite dish. And now we can marinate on our own, bake as much as we ourselves want these fragrant pieces, and enjoy them at home without compromising the family budget.

  • Chicken fillet - 650 gr.
  • Soy sauce - 40 ml.
  • A clove of garlic - 2-3 pcs.
  • Lemon - ½ pcs.
  • Honey - 1 tbsp. l
  • Greens, ground black pepper - to taste.

1. Clean fillet from films and tendons, then rinse thoroughly and dry. Cut prepared meat into identical slices, about the size of a matchbox. For the convenience of pickling, fold the slices immediately into a deep container, which will be conveniently covered and it will not oxidize - ideally, a glass bowl with a lid is suitable.

2. Squeeze the juice from half a lemon into a clean bowl so that the seeds do not fall into the cup. Pour soy sauce and melted honey into the citrus liquid.

So that garlic does not come in large pieces and gives more of its piquant taste, it is best to squeeze it through the press to the previous ingredients. Shake everything well until smooth.

It is not necessary to add salt to the resulting sauce, because lemon and soy sauce will give the desired effect.

3. Pour the slices with aromatic marinade, mix so that the darkish liquid mass envelops each piece, and leave to saturate for two hours. During this time, it is advisable to turn the mass at least a couple more times so that the impregnation is uniform.

4. Once the flesh begins to lighten due to the content of lemon juice in the marinade (after about an hour and a half), you can start preparing skewers.

They must be soaked in water so that under the influence of temperature they do not catch fire in the oven, and also do not absorb moisture from the meat.

5. String 5-8 pieces of meat that has reached the desired condition on skewers, and lay them on the sides of the baking dish so that they are in the position as on the grill. So it will be easier to turn them over, they will be better blown with hot air and excess juice will drip to the bottom of the dishes, thereby not splashing the inside of the oven.

It is better to fold them slightly diagonally, so the filled skewer will be more full-bodied.

6. Preheat the stove to 200 degrees and put inside it a form with strung meat. Bake for half an hour, not forgetting to turn the skewers with meat at least 2-3 times in the process.

If you feel that the meat is too dry, you can pour it with the remains of marianade, or juice that has dripped into the form.

Honestly, I used to think that only skewers produce a delicious kebab. And really a real discovery was the recipe for cooking meat in a jar.

At first I thought that there would probably be something like a stew to taste, but still I took a chance and it turned out very tasty. The bird flesh remains very juicy and tender, and on top it is covered with a thin ruddy crust!

A huge plus of this dish is that it is dietary and is suitable for almost everyone. And especially for children, you can not add spicy spices.

The main thing is to keep a few basic secrets:

  • Marinate meat well - at least 2 hours,
  • Add only fresh aromatic spices,
  • Use only whole cans without chips and cracks so that they do not burst when heated,
  • For the same reason, put the workpiece in a glass container only in a cold oven and only then turn on the heat.

  • Chicken pulp - 500 gr.
  • Soy sauce - 35 ml.
  • Sprig of rosemary - 2 pcs.
  • Paprika, Provence herbs, dried tomatoes, mustard - 1 tsp each.

Also, as in the first embodiment, I decided to use soya marinade, but with completely different components. This sauce is very well combined with tender chicken. Therefore, we add it, including for a more saturated flavor.

1. It is best to take the flesh from the thighs or breast. Remove skins and thin subcutaneous films, and then thoroughly rinse the meat in running water. Large pieces will be baked for a long time, so it is advisable to cut them into small cubes or cubes.

2. Now the slices must be marinated. To do this, season the stripes with ground spices and salt. A light aroma of smoke will give a couple of spoons of soy sauce, but you can not use it if you do not really like this dark liquid.

5. Carefully pierce the pickled pieces in the center with skewers and string them, not squeezing too tightly with each other. If the strips of pulp are long, then they can be folded in half and pierced immediately through two halves.

Dip 3-4 such “nozzles” in a liter jar and toss the rosemary branches there. Seal the top tightly with a layer of foil to create the effect of a grill bath.

6. Send the filled jar to the cold oven. Set the heating to 200-220 degrees and after half an hour you can already turn off the oven.

Only immediately the container cannot be pulled out, because it will be red-hot and may burst from contact. It is better to leave her alone for about 25 minutes, then open the door and release the remnants of hot air. And only after that you can carefully remove it with dry tacks and put it on a wooden stand or board (also dry and clean).

7. Trying not to get burned with thick steam from the can, remove the cap from the foil. Take out the prepared meat in turn and serve the same hour for tasting.

3. Chop the medium-sized onion into thin half rings and mash it with your hands so that it becomes softer and easily gives your juice away. Pour it over the meat and mix well with your hands so that the marinade along with the onion straws completely envelops the pieces of the bird. Allow to stand in the cool of 1.5-2 hours.

4. Place the sleeve on a baking sheet. Transfer the pickled flesh into it, put a sprig of rosemary and tie on the sides so that the steam does not come out and the liquid does not run out.

5. Send for 40-50 minutes in an oven preheated to 180 degrees. If the pieces are not sufficiently browned, open the bag on top and turn on the convection mode for 10-15 minutes.

  • Chicken flesh - 700 gr.
  • Fresh potatoes - 5 amount

1. Pass washed and dried pulp through a meat grinder. Season with salt, ground pepper and spice with a curry spice. It is good to knead the minced meat by hand, and it would even be better to beat it on the table so that it becomes more plastic and does not crumble later with a nozzle on skewers.

Be sure to soak the wooden skewers in cool water, otherwise they will burn in the oven and absorb the juice, which ideally should remain inside our minced meat.

2. Oblong shaped potatoes to remove from the peel and cut into rings a centimeter thick. Soak it for about 5-10 minutes in well-salted water so that the vegetable is slightly saturated with brine and not fresh.

It is advisable to choose a slightly starchy variety that boils quickly, but does not crumble.

  • Chicken fillet - 500 gr.
  • Champignon, cherry tomato - 6 pcs each

  • Olive oil - 2 tbsp. l
  • Ground black pepper, salt - 1 tsp each.

1. Rinse the fillet and pat it well with a paper towel to remove excess moisture. In order for the meat and vegetables to bake evenly, and also nothing to burn, the pulp should be cut into pieces that will be no larger than a cherry tomato in size.

Salt and pepper the slices, and then pour in the oil and thoroughly crush with your hands so that the spices are spread over the meat and olive oil envelops each piece - this technique will allow you to "lock" the juice inside the meat pieces. Leave alone for the period of preparation of vegetables.

2. For bell pepper, remove the stem and seed box. The remaining fleshy sidewalls are cut into identical squares or rectangles. Small peeled mushrooms, as well as washed cherry cut into halves.

3. String meat with vegetable slices so that each piece of bird pulp is adjacent to different components at the ends. For example, a slice of pepper, meat, a slice of champignon, again poultry meat, tomato, etc.

It is desirable to plant the ingredients denser so that they mutually hold each other and are saturated with juices.

  • 2 chicken breasts.
  • 2 tablespoons of mustard.

  • Salt, a mixture of peppers, ground ginger, dill greens - to taste.

1. Cut off the flesh of the breast from the bones and cartilage. Remove the skin and thin film from it. Rinse well and pat dry with a paper towel. Cut into equal cubes about three centimeters thick.

2. Combine vinegar with oil and sauce, add approximately ½ tsp. mix peppers and ground dry ginger, salt with a pinch of salt. Beat until smooth and pour the meat slices with the mixture. Stir well and leave to saturate with aromas for about an hour.

3. If you want to give the finished dish a touch of spring freshness, then you can additionally chop onions and favorite greens with rings. Send them to the harvest and pickle together for about another hour.

4. While the meat mass is infused, it is worth preparing skewers. To do this, rinse bamboo thin skewers and pour cool water. After 20 minutes, drain the liquid and lightly pat the sticks with a paper towel.

Immediately you can start stringing meat. Too tightly pieces do not need to be pressed together - we need steamed and browned ones, but not welded with one elongated lump.

If you like onions, you can chop onion slices between pieces of pulp.

5. On a baking sheet, lay a sheet of foil so that its long edges remain free. In the center, lay skewers with chicken in a slender, not close row.

6. Tuck and fasten the edges of the foil so that we get a tightly packed bag with the contents inside. It is not advisable to leave openings so that the steam remains inside and, circulating, evenly steamed the meat.

7. Send such a brilliant envelope on a baking sheet to a preheated oven and darken for about half an hour at 180 degrees. Then expand the edges of the shell and in the "Grill" mode bake the pieces until golden brown for about 10 minutes.

Very juicy meat will certainly delight you with its tenderness. In this case, the diet is obtained. It can be used even for those who are contraindicated in baked and fried food, because in fact it turns out rather stewed.

Somehow I don’t like to cook giblets, but my family really like a spicy-sweet snack in the form of a favorite heart dish. It only takes a couple of hours to cook them, including the time for marinating and baking.

You can use the marinade that you usually prefer for the bird. Or try mixing a bag from a bag with ketchup, honey and a little vinegar. It will turn out a very original taste, reminiscent of Chinese cuisine.

  • Hearts - 500 gr.
  • Chicken marinade, soy sauce - 2 tbsp each. l
  • Honey, vinegar 6% - 1 tbsp. l
  • Onions, poultry spices, sugar, salt - to taste.

1. The cooled hearts of the bird must be washed well and allowed to drain water. To speed up the process, they can be folded onto a sheet of paper kitchen towel and blotted on top with a second segment.

2. In a deep cup, combine the marinade (best of the "Maheev" mayonnaise for chicken based on mustard) with soy sauce, melted honey and weak vinegar (lovers can use 9% sharper and even replace it with rice white or red) .

If desired, 1-2 onions can be grated or chopped with a blender and added to this mixture. Beat until smooth and pour the hearts into the resulting mass.

To your taste, you can additionally sprinkle with seasoning for the bird, slightly add salt and soften the spicy flavor a little more with a couple of pinches of granulated sugar. Stir and leave alone for at least an hour in the refrigerator, be sure to cover the top with a bag, cling film, or a regular lid.

3. On the prepared bamboo skewers soaked in water, string 3-4 hearts, trying to leave at least a small gap between them.

4. While the oven is warming up to 180 degrees, put the prepared skewers on a baking sheet so that the edges of the skewers lie on its sides and the offal hangs over the bottom of the deep sheet.

Or you can put them on a wire rack, always oiled and placed on top of a baking sheet, into which then the juice will drip during baking.

5. For half an hour, send this appetizer to a preheated oven, and then serve hot with arugula and sour cream and garlic sauce. Garnish will suit anyone.

Even those who do not eat such an offal like hearts rarely seldom deny themselves the pleasure of enjoying the resulting delicacy.

Unlike pork, which we also cooked in the oven, and beef, kebabs are always very soft. And knowing the recipes for cooking in the oven, you can always please your loved ones with a dish that has long become a "summer cottage".

This is because people usually indulge them in the warm season, when most of us prefer to spend free time in nature or on a suburban area. And now they can pamper themselves at any time of the year.
